For Bobby Flay's second restaurant he riffed on Spanish food at Bolo. We riffed on the wildness of the visual scene in places like Barcelona with a collage-like interior of custom wallpaper, collage light fixtures and painted mirrors.

The restaurant was a hit from the start and the intimacy of Bolo contrasted nicely with the cavernous Mesa Grill. Bolo was closed when the building was demolished for a 22 Street entrance to a troubled residential tower and a new Charlie Trotter restaurant. Still no Trotter restaurant and sadly, no Bolo either.

Bolo graphics were by Alexander Isley, who designed the graphics for Mesa Grill as well.
